Food ingredients manufacturer, Macphie, has unveiled a new addition to its range of premium Sensations cake mixes. The new Ginger Sensation cake mix has a warm, spicy flavour and is packed with pieces of crystallised ginger to give it a distinctive texture. The Sensations cake mixes range includes Lemon, Apple & Cinnamon, Chocolate & Orange. Each contains real fruit pieces that add a flavour burst and moistness to the crumb, when baked. Packed in 12.5kg bags, they require only the addition of oil and water to produce high quality loaf cakes, cup cakes, muffins and tray bakes.

According to Mintel, the UK market for cake and cake bars has increased by 7% in the last year to reach £1.52bn in 2007. Two thirds of consumers like to treat themselves from time to time and one third is prepared to pay more for premium cakes.
