Battenburg

Ingredients:
1kg Macphie Genoese Mix
400g Water
145g Cake Margarine
1g Yellow Food Colouring
1g Pink Food Colouring
Raspberry Jam
Yellow Marzipan

Method:
Add cake margarine and Genoese Cake Mix in a mixer fitted with a beater and mix on 1st speed for 1 minute (the water should be tempered to give a final batter temperature of 22-24ºC (72-76ºF)
Add water and food colouring on 1st speed for 1 minute
Scrape down and beat for a further 4 minutes on 2nd speed
Reduce to 1st speed and mix for a further minute
Make up an additional batch using pink food colouring
Deposit each batter into 18”x 30” sheets and bake at 180ºC (360ºF) for 40 minutes
Leave to cool then cut into equal lengths sandwich together with jam and then roll in yellow marzipan
