Mint & Halloumi Bread
Ingredients:
800g Softie®
8kg Bread Flour
325g Yeast
4.1kg Water
Mint leaves
Halloumi Cheese - diced
Method:
Blend Softie®, bread flour, yeast and water in a machine bowl for 2 minutes on 1st speed
Mix for 5 minutes on 2nd speed
To approximately 8kg of dough, chop through mint and Halloumi cheese according to taste Leave to rest for 5 minutes
Scale 350g of dough into 6 individual rounds and arrange into a 6” diameter sponge tin or foil
Prove at 35°C 85% R.H. for approximately 45 minutes
Bake at 220°C (435°F), for 35 minutes
