Carrot & passion fruit gateau

- Place American Carrot Cake Mix, grated carrot, passion fruit flavouring and water into a bowl and mix for 1 minute on slow speed.
- Scrape down and mix for a further 3 minutes on second speed.
- Deposit 800g of the mixture into a greased tin.
- Bake for 45 minutes at 180°C (360°F).
- Once cool, sandwich together with the cream cheese frosting and mask all the way around the gateau.
- Finish with passion fruit in the centre, rosettes of frosting around the edge and a slice of caramelised carrot for decoration.
- 1250g American Carrot Cake Mix
- 250g grated carrot
- 375g water
- 18g passion fruit flavouring
- 800g cream cheese frosting
- 50g passion fruit
