1. Place American Carrot Cake Mix, grated carrot, passion fruit flavouring and water into a bowl and mix for 1 minute on slow speed.
    2. Scrape down and mix for a further 3 minutes on second speed.
    3. Deposit 800g of the mixture into a greased tin.
    4. Bake for 45 minutes at 180°C (360°F).
    5. Once cool, sandwich together with the cream cheese frosting and mask all the way around the gateau.
    6. Finish with passion fruit in the centre, rosettes of frosting around the edge and a slice of caramelised carrot for decoration.
