Coconut, Pineapple & Passionfruit Loaf Cake

- Place all ingredients into a machine bowl and mix for 2 minutes on slow speed.
- Scrape down and mix for 6 minutes on second speed.
- Give a final minute on slow speed.
- Deposit 400g into a lined loaf tin.
- Sprinkle top with granola and seed mix.
- Bake for 45 minutes at 180°C (360°F).
- 1000g Mississippi Muffin/Cake Mix
- 425g water
- 235g vegetable oil
- 85g desiccated coconut
- 170g crushed pineapple
- 35g passion fruit flavouring
