Method Makes 1 portion

  1. Heat Macphie Hollandaise Sauce in pan and remove from heat just before boiling point.

  2. Half and toast the muffin.

  3. Poach the egg.

  4. Wilt the spinach in a pan with warm oil.

  5. Assemble muffin, spinach and egg on muffin.

  6. Pour over Macphie Hollandaise Sauce, sprinkle with cayenne pepper and flash under grill.
