Method

    1. Press crushed shortbread firmly into bottom of small pots.
    2. Pipe in lemon curd.
    3. Pour Macphie Sicilian Lemon Dessert into saucepan bring to boil and boil vigorously for 2 minutes, stirring regularly.
    4. Allow to cool slightly then pour on top of lemon curd and place in fridge to set for 1–2 hours.
    5. Top with crushed meringue and sprig of mint to serve.
