Place the Lemon Sensation in a bowl and beat on slow whilst gradually adding the water and oil for one minute, scrape down.
Mix for a further two minutes on medium, then reduce to slow and mix for a final minute.
Divide the batter equally into two 7×12 inch trays.
Bake at 180°C (360°F) for 35 minutes.
When cool, cut each into three equal layers.
Lightly whip GlenDelight and blend with mascarpone.
Pipe layer of cream cheese mixture on top of cake layer, followed by lemon curd.
Top with layer of Lemon Sensations and repeat.
Place final cake layer on top and dust with Sweet Snow.
