1. Place all ingredients into spiral mixer and mix for 2 minutes on 1st speed, then 6 minutes on 2nd speed.
    2. Divide into round 60g dough pieces.
    3. Prove for approximately 50 minutes at 38°C (100°F) / 75-80% R.H.
    4. Remove doughnut from prover 5-10 minutes before frying to allow a dry skin to form.
    5. Fry at 190°C (375ºF) for 90 seconds each side.
    6. Inject with choice of Luxury Filling (20g) and finish with appropriate icing.
