1. Peel and dice the fresh mango.
    2. Mix together all the fresh ingredients with the mango.
    3. Fold in the Macphie ku-li® Mango Coulis, Malibu and coconut.
    4. Season to taste and more chilli if needed.
    5. Serve alongside pan fried fresh salmon or cooked free range chicken.


  • 2 ripe mangos
  • 150g Macphie ku-li®Mango Coulis
  • 1 red pepper (finely diced)
  • ½ red onion (finely diced)
  • 6g chopped fresh coriander
  • 1 red chilli (finely chopped)
  • Juice from 1 lime
  • 50g Malibu
  • 10g white wine vinegar
  • 10g toasted desiccated coconut
  • Salt and black pepper to taste
