1. Peel and dice the fresh mango
    2. Mix together all the fresh ingredients with the mango
    3. Fold in the ku-li®, Malibu and coconut
    4. Season to taste and more chilli if needed
    5. Serve alongside pan fried fresh salmon or cooked free range chicken


  • 2 ripe mangos
  • 150g Mango Fruit ku-li®
  • 1 red pepper (finely diced)
  • ½ red onion (finely diced)
  • 6g chopped fresh coriander
  • 1 red chilli (finely chopped)
  • juice from 1 lime
  • 50g Malibu
  • 10g white wine vinegar
  • 10g toasted desiccated coconut
  • salt and black pepper to taste
