Peanut butter & mallow sandwich cookies

- Place the american soft cookie mix and butter/margarine in a mixer and, using a beater, blend together on slow speed.
- Add water gradually over 10 seconds and beat for 1 minute on medium speed.
- Blend in the peanut butter on slow speed.
- Deposit 50g cookie pieces onto a baking tray and bake at 360oF (180oC) for 18-20 minute.
- Once cool, sandwich cookies with whipped mallow.
- 1000g Macphie American Soft Cookie mix
- 200g peanut butter
- 100g butter or margarine
- 140g water
