Potato and ham cakes with mango salsa

- Combine all the ingredients together to form patties.
- Fry in a little oil until hot through and crispy on the outside.
- For the salsa, combine all ingredients including Macphie Mango ku-li® together and serve with the potato cake and salad.
- 275g potato (mashed)
- 80g ham (shredded)
- 100g Macphie White Wine Sauce
- 5g wholegrain mustard
- 10g spring onions
- Seasoning (to taste)
- 125g Macphie Mango ku-li®
- 250g mango (finely diced)
- 50g red pepper (finely diced)
- 50g red onion (chopped)
- 10g fresh coriander leaves (chopped)
- 5g lazy chilli
