Less waste = more taste

For our customers, food wastage can feel like literally throwing money away. Waste generated from kitchens and bakeries has a significant financial and environmental impact, and therefore it is important to explore your options to find efficient ingredients and ways of working.

Not only that, but over 11 million people in Britian currently face food insecurity, thus it is vital that nutritious, good-to-eat food is repurposed and distributed to support those who need it the most.

Our products have a number of nifty benefits that can help food operators curtail the growing financial and environmental costs of wastage, so let us highlight these benefits in order to ensure they don’t go to waste!

Many of our products boast an impressive shelf-life, helping customers minimise loss through expiration. Once opened, our savoury sauces last 7 days when refrigerated.

And it’s not just our savoury sauces – our range of icings, fillings and frostings keep until the end of shelf life, meaning they can be used for a minimum of 6 months after being manufactured (see individual product page for specific shelf life).

Based on this, you can plan ahead and order in bulk, without the pressure of using all the stock in a short period of time and the potential of wasting large quantities during quieter periods. Stock management is also much simpler, as operators have a much smaller quantity of products to control, and are therefore more aware of when stock must be used by.

Furthermore, placing larger, less frequent orders will reduce carbon emissions from deliveries, again having a positive impact on the environment.

Whilst many of our products boast an impressive shelf life, there are even more ways to further extend. By removing some of the water when making baked goods and replacing with glycerin, or alternatively by adding potassium sorbate, you can extend the shelf life of your goods.

Our products are also versatile, able to offer varied menus without bloating’ SKU inventories and enabling customers to re-use products in new applications to minimise wastage.

Take our Béchamel with Butter Sauce – it can be used to make beef and lentil lasagna one day, primavera gnocchi the next, and even a truffle pizza following that.

You can also use one product to cater for all day parts, whether breakfast, lunch, or dinner. Macphie Hollandaise Sauce can do just, as its versatility allows you to make various eggs benedict dishes for breakfast, egg and cress baguettes for lunch, and a surf and turf burger for dinner.

It is important to find ways of reusing unused foods to create new meals instead of letting them go to waste.

Cake off-cuts is typically thrown to the side, but they can be repurposed as inclusions in your ice cream offerings. Try out our sticky toffee pudding ice cream or mixed berry ripple ice cream recipes the next time you have leftover cut-offs.

Got a little Sensation® mix left in the bag, but not enough to create a full batch of muffins? Mix and match with other flavours to create hybrid flavour muffins. This not only uses up leftover mix, but it also creates unique tasting, eye-catching bakes.

And whilst no one wants food to be left unpurchased, it does unfortunately happen from time to time. But don’t panic – we’ve got suggestions on how to use repurpose your unpurchased products to create new offerings.

Yesterday’s fresh baguettes, for example, can be transformed into today’s pizza baguettes, or brownies or cakes can be cut up into smaller pieces and combined with Mactop® Extra and o.t.t® dessert topping to create cake jars.

Last, but by no means least, Macphie are working hard to reduce food wastage too. Since April 2022, Macphie has donated over 24 tonnes of food to the UK food poverty charity FareShare, allowing them to distribute our good-to-eat food surplus to over 942 charities throughout the UK. That equates to almost 60,000 meals!

Furthermore, our work with FareShare has ensured more than 42 tonnes of CO2e have been prevented from being wasted, helping to improve the environment.
