Recipe 100% loaded fruit cake
Ingredients
- 1kg Macphie Country Cake Mix
- 1kg soaked dried fruit
- Macphie 5th Avenue® White Icing
- Ginger pieces
- 200g vegetable oil
- 400g water
Method
Place Macphie Country Cake Mix into a machine bowl fitted with a paddle, add in the vegetable oil and water gradually, mix for 1 minute on slow speed, scrape down.
Mix for 6 minutes on medium speed.
Mix for a final minute on slow.
Add the soaked dried fruit into the mix then bake at 180°C for approx. 40 mins.
Once cooled flood cake with Macphie 5th Avenue® White Icing and some stem ginger chunks.
