Recipe Arctic roll

Ingredients
- 1kg Macphie Sponge Mix
- 550g water
- Macphie ku-li® Raspberry fruit coulis
- Ice cream

Method
Place Macphie Sponge Mix & water into a mixing bowl with a whisk and whisk for 1 minute on slow speed, scrape down.
Whisk for 8 minutes on medium speed.
Deposit 1kg into a greased and lined 18″x30″ 4 sided tray and spread evenly.
Bake for 5-6 minutes at 240°C.
Prepare ice cream into a log shape by putting it into greaseproof & rolling until desired shape is achieved.
Turn out sponge onto sugared paper or cloth.
Once slightly cooled, spread Macphie ku-li® Raspberry fruit coulis onto the sponge sheet.
Roll up ice cream log tightly in sponge, trimming sponge as required.
