- Place Macphie Sponge Mix & water into a mixing bowl with a whisk and whisk for 1 minute on slow speed, scrape down.
- Whisk for 8 minutes on medium speed.
- Deposit 1kg into a greased and lined 18"x30" 4 sided tray and spread evenly.
- Bake for 5-6 minutes at 240°C.
- Prepare ice cream into a log shape by putting it into greaseproof & rolling until desired shape is achieved.
- Turn out sponge onto sugared paper or cloth.
- Once slightly cooled, spread Macphie ku-li® Raspberry fruit coulis onto the sponge sheet.
- Roll up ice cream log tightly in sponge, trimming sponge as required.
