Method

  1. Place Macphie Sponge Mix & water into a mixing bowl with a whisk and whisk for 1 minute on slow speed, scrape down.

  2. Whisk for 8 minutes on medium speed.

  3. Deposit 1kg into a greased and lined 18″x30″ 4 sided tray and spread evenly.

  4. Bake for 5-6 minutes at 240°C.

  5. Prepare ice cream into a log shape by putting it into greaseproof & rolling until desired shape is achieved.

  6. Turn out sponge onto sugared paper or cloth.

  7. Once slightly cooled, spread Macphie ku-li® Raspberry fruit coulis onto the sponge sheet.

  8. Roll up ice cream log tightly in sponge, trimming sponge as required.
