Method Makes 2 sponges

  1. Add the water to Macphie Sponge Mix and whisk on slow speed for 1 minute
  2. Scrape down and whisk on middle speed for 10-15 minutes or top speed for 5-10 minutes, followed by 1-2 minutes on slow speed
  3. Deposit 400g into  8''round or square cake tin (you will need 2). Bake at 175°C for 20-25 minutes
  4. Leave to cool
  5. Using a planetary mixer whip the Macphie Mactop Extra® on medium speed until it forms soft peaks (around 5-6 minutes)
  6. Divide the cream into however many colours you will be using, including for the sandwich layer
  7. Flavour and colour Macphie Mactop Extra® as desired (paste colours are preferred)
  8. Sandwich whipped Macphie Mactop Extra® between the layers then decorate
