Method

  1. To make the ice cream, whip the Macphie Mactop® Traditional and vanilla extract together until ribbon stage, place into a tray or container lined with cling film and freeze for at least 24 hours

  2. Whisk the Macphie Sponge Mix and water together in a machine bowl fitted with a paddle for 10 minutes on middle speed.

  3. Spread the sponge mix onto a flat baking tray. Approx 5mm deep.

  4. Bake at 200°C for 5-6 minutes.

  5. Once cool sandwich with the pre-made ice-cream and portion.

  6. Dip the ends of the ice cream sandwiches in Macphie 5th Avenue White Icing and then dip into coloured sprinkles.
