Recipe Birthday cake ice cream sandwich

Ingredients
- 1L Macphie Mactop® Traditional
- 500g Macphie Sponge Mix
- Macphie 5th Avenue® White Icing
- 250g water
- 2tsp vanilla extract
- Coloured sprinkles

Method
To make the ice cream, whip the Macphie Mactop® Traditional and vanilla extract together until ribbon stage, place into a tray or container lined with cling film and freeze for at least 24 hours
Whisk the Macphie Sponge Mix and water together in a machine bowl fitted with a paddle for 10 minutes on middle speed.
Spread the sponge mix onto a flat baking tray. Approx 5mm deep.
Bake at 200°C for 5-6 minutes.
Once cool sandwich with the pre-made ice-cream and portion.
Dip the ends of the ice cream sandwiches in Macphie 5th Avenue White Icing and then dip into coloured sprinkles.
