Recipe Burnt honey ice cream sandwich

Ingredients
- 500g Macphie Sponge Mix
- 1L Macphie Mactop® Traditional
- 250g water
- 250ml honey

Method
For the burnt honey, add the honey to a pan and bring to the boil, allow to cook until it turns slightly darker brown in colour.
To make the ice cream, whip the Macphie Mactop® Traditional until ribbon stage add the burnt honey and mix, place the ice cream mix into a tray or container lined with cling film and freeze for at least 24 hours.
Whisk the Macphie Sponge Mix and water together in a machine bowl fitted with a paddle for 10 minutes on middle speed
Spread the sponge mix onto a flat baking tray. Approx 5mm deep.
Bake at 200°C for 5-6 minutes.
Once cool sandwich with the pre-made ice-cream and portion.
