Recipe Carrot patch loaf cake

Ingredients
- 1000g Macphie Vegan Muffin & Cake Mix
- Macphie Rainbow Frosting Vanilla
- 170g vegetable oil
- 300g water
- 30g vegan suitable glycerine
- 12g bicarbonate of soda
- Sugar paste
- 6g mixed spice
- 4g ground ginger
- 3g ground cinnamon
- 300g grated carrot
- 100g drained pineapple
- 150g sultanas
- Pistachio nuts (chopped)

Method Makes 2 loaf cakes
Mix dry ingredients together, add liquids and beat for 5 minutes on medium speed (add sultanas at the end).
Divide batter into 2 x large loaf cakes
Bake at 180°C (360°F) for 50-55 minutes.
Allow to cool.
Top with Macphie Rainbow Frosting Vanilla and decorate with sugar paste carrots and chopped pistachio nuts.
