Recipe Chocolate Lamingtons
Ingredients
- Macphie Sweet Snow®
- 1kg Macphie Chocolate Crème Cake Mix
- 350g egg
- 225g water
- 300g vegetable oil
- Macphie Chocolate frosting
- Macphie Belgian Chocolate Filling
- Desiccated coconut
- Enrobing Syrup
- 250g fondant
- 100g water
Method
In a machine bowl fitted with a paddle, add the egg and Macphie Chocolate Crème Cake Mix and beat for 1 minute on slow speed and 3 minutes on medium speed.
Add the oil/margarine and water and mix for 1 minute on slow speed, Scrape down and mix for a further 3 minutes on slow speed.
Deposit as required and bake for 30 minutes at 180⁰C
Once cooled cut off the top layer and spread a small amount of Macphie Belgian Chocolate Filling and Macphie Chocolate Frosting
Layer with another sponge and cut into squares.
Heat up the enrobing syrup and until the fondant melts.
Dip the lamingtons into the syrup and let drawn for a few minutes and then roll into desiccated coconut.
