Method

  1. Crush the biscuits to a fine crumb.

  2. Melt the butter. Once melted  tip the biscuit crumbs into the butter and mix well until  combined. Press the buttery crumbs into the bottom of loose-bottomed tin. Chill in the refrigerator while you make the topping.

  3. Combine the cream cheese and Macphie Mactop® Traditional in a large mixing bowl. Mix until light and fluffy. Mix in the pistachio paste. The mixture should be very light and fluffy.

  4. Spread the cream cheese/ Macphie Mactop® Traditional mixture over the biscuit base and smooth the top with a palette knife or spatula. Cover and chill.

  5. Once chilled release the catch of the springform and add pistachio to the edges of the cheese cake, then slice and serve.
