Method

  1. Add the Macphie Soft & Chewy Chocolate Cookie Mix, water and chocolate chips into a machine bowl fitted with a paddle, mix on middle speed until a dough is formed.

  2. Ball cookie mix into 130g balls and place in individual cooking pans.

  3. Bake at 180⁰c for 8 minutes.

  4. Leave to cool slightly before balling the mascarpone ice cream on top.

  5. Pour the hot espresso over the  ice cream and allow it to soak into the soft chocolate cookie.
