Recipe Cookie affogato

Ingredients
- 1kg Macphie Soft & Chewy Chocolate Cookie Mix
- 130g water
- 230g chocolate chips
- Mascarpone ice cream
- Hot espresso

Method
Add the Macphie Soft & Chewy Chocolate Cookie Mix, water and chocolate chips into a machine bowl fitted with a paddle, mix on middle speed until a dough is formed.
Ball cookie mix into 130g balls and place in individual cooking pans.
Bake at 180⁰c for 8 minutes.
Leave to cool slightly before balling the mascarpone ice cream on top.
Pour the hot espresso over the ice cream and allow it to soak into the soft chocolate cookie.
