Recipe Cookie focaccia

Ingredients
- 125g Macphie Sofrol
- 1kg bread flour
- 40g baker's yeast (or 30g dried instant yeast)
- 700g water
- 10g cocoa powder
- 400g Macphie Chocolate Chip Cookie Dough
- Extra virgin olive oil

Method
In a mixer fitted with a dough hook add the Macphie Sofrol, bread flour, yeast, water and cocoa powder. Then mix for 2 minutes on slow speed and 6 minutes on fast speed until a soft and stretchy dough has formed.
Leave to rest for an hour then add the Macphie Chocolate Chip Cookie Dough, chop into the dough until evenly distributed.
Divide the dough into 4 x (12“ x 7″) foils. Use some of the olive oil to stop the dough sticking this also acts as a glaze.
Leave the dough to double in size again and just before putting in the oven drizzle some more of the olive oil and sprinkle with some more Macphie Chocolate Chip Cookie Dough.
Bake at 215 °C for 15-20 minutes.
Once cooled serve and enjoy!
