Recipe Cookies and Cream Maritozzi
Ingredients
- 300g Macphie Softie®
- 2kg bread flour
- 200g sugar
- 150g yeast
- 400g water
- 400g egg
- 400g milk
- 300g softened butter
- GlenGlaze®
- Macphie Cookies and Cream Frosting
- Macphie Mactop® Extra
Method
To make the Maritozzi dough place Macphie Softie®, bread flour, sugar, yeast, water, egg and milk into the spiral mixer and mix for 2 mins on slow speed, then mix again for 6 mins approx. on 2nd speed.
Add softened butter and continue mixing until you get a smooth dough, and all the butter is mixed through.
Scale and mould as desired.
Prove for approx. 1hr at 38⁰C, 85% relative humidity.
Bake for approx. 12mins at 205c / 400f.
Slice and fill with Macphie Cookies and Cream Flavour Frosting.
