Method

  1. Mix the Macphie Soft & Chewy Cookie Mix with the water in a mixing bowl with 50g of pistachio paste, chopped dates and chopped pistachios, mix on a slow speed until the dough has formed.

  2. Allow to rest for 5 minutes.

  3. Weigh into 150g balls and chill.

  4. Bake in a pre-heated oven at 150°C for 18-20 minutes.

  5. Mix some of the pistachio paste with the Macphie o.t.t® PLUS White Chocolate dessert topping in a mixing bowl to taste.

  6. Whilst still slightly warm, pipe the pistachio and white chocolate mix, into and onto the centre to the cookie and decorate with some chopped pistachios.
