Recipe Date, Rose and Pistachio Tiramisu cookies
Ingredients
- 1kg Macphie Soft & Chewy Cookie Mix
- 40g Macphie Mactop® Traditional
- 20g Dates
- Coco powder
- 10ml Rose water
- 50g Pistachio
- 20g Mascarpone
Method
Place Macphie Soft & Chewy Cookie Mix, rose water, dates and pistachios into a machine bowl fitted with a paddle.
Add water and mix on slow speed until a dough is formed.
Roll into 20g balls and bake at 170°C for 11-12 minutes and allow to cool.
Put the Macphie Mactop® Traditional and mascarpone in a large bowl.
Whisk until the Macphie Mactop® and mascarpone completely combined and have the consistency of thick whipped cream.
Pipe into desired mould then freeze, when frozen de-mould and place onto cookie and decorate. Allow to defrost and enjoy.
