Method

  1. Place Macphie Soft & Chewy Cookie Mix, rose water, dates and pistachios into a machine bowl fitted with a paddle.

  2. Add water and mix on slow speed until a dough is formed.

  3. Roll into 20g balls and bake at 170°C for 11-12 minutes and allow to cool.

  4. Put the Macphie Mactop® Traditional and mascarpone in a large bowl.

  5. Whisk until the Macphie Mactop® and mascarpone completely combined and have the consistency of thick whipped cream.

  6. Pipe into desired mould then freeze, when frozen de-mould and place onto cookie and decorate. Allow to defrost and enjoy.
