Method

  1. Use tempered water to give a final dough temperature of 28°C (82°F). Mix Macphie Premium Doughnut Concentrate for 2 minutes on slow speed & 8 minutes fast speed on a spiral mixer.

  2. Remove dough from mixer, process through plant or pastry brake to achieve variety of shapes and sizes, rest for 5mins.

  3. Prove at 38°C (100°F) 75% RH for approx. 40 minutes. Remove doughnuts from the prover and let skin up for 10mins before frying. Fry at 190°C – 195°C for 90 seconds each side depending on size.

  4. Finish using Macphie Mactop® Extra or Mactop® Traditional, Macphie 5th Avenue® Icings range,  Macphie Luxury Fillings range, Macphie Sweet Frost® and Macphie Sweet Snow®.
