Recipe Eton mess scrolls

Ingredients
- 200g Macphie Bun Concentrate
- Macphie Cream Cheese Frosting
- 1kg bread flour
- 30g baker's yeast (or 15g instant dried yeast)
- 500g water
- Bake stable cinnamon filling
- Strawberry compote
- Crushed meringue

Method
In a spiral mixer add in the Macphie Bun Concentrate, bread flour, yeast and water, and mix for 2 minutes on slow speed then 6 minutes on fast speed until a dough is formed.
Pin out dough into a rectangle and spread with bake stable cinnamon filling.
Roll up the dough and divide into 18 equal size pieces and place in a deep oven dish or gastro tray.
Cover and leave in a warm humid place until the pieces double in size.
Then bake in a fan assisted oven at 200°C for 18-20 minutes.
Allow to cool and decorate the top with Macphie Cream Cheese Frosting, strawberry compote and crushed meringue.
