Frozen raspberry souffle - Macphie


  1. Whip up 500g Macphie Mactop® Traditional on a medium speed until soft peaks are formed. This will take 5-6 minutes. 

  2. Once whipped fold through 100g Macphie ku-li® Raspberry fruit coulis ensuring its incorporated completely.

  3. Place mixture into a piping bag. 

  4. Pipe into pre lined ramekins with acetate allowing you to pipe above the edge of the ramakin leaving a flat top. 

  5. Allow to freeze before serving (note it won’t freeze completely hard and will be perfect as is ready to serve).

  6. Garnish with Macphie Sweet Snow® & freeze dried raspberries.
