Method Makes 12 swirls

  1. Mix the Macphie Softie®, bread flour, yeast and water together for 10-15 minutes on middle speed in a conventional mixer. The temperature of the dough should be 27°C. Pin out 1kg dough into rectangle approximately 5mm thick.

  2. Mix the butter, Macphie Plant-based White Sauce, crushed garlic, and salt together

  3. Spread the filling evenly over the dough piece then roll as per Swiss roll

  4. Divide the rolled dough into twelve equal pieces. Place upright on parchment paper, evenly spaced,  press down gently

  5. Prove at 40°C 85% relative humidity for 45-60 minutes

  6. Egg wash and top with mozzarella before baking

  7. Bake at 215⁰C for 12-15 minutes
