Recipe Halloween doughnuts

Ingredients
- 1kg Macphie Premium Doughnut Concentrate
- 1kg strong bread flour
- 80g yeast
- 840g water
- Macphie 5th Avenue® Icings
- Sugar sprinkles
- Colours

Method
Place the Macphie Premium Doughnut Concentrate, strong bread flour, yeast and water into spiral mixer and mix for 2 minutes on 1st speed. Then 6 minutes on 2nd speed.
Remove dough from bowl, chaff up and rest for 5 minutes.
Pin out to 1cm thick and cut out shapes using a cutter.
Prove for 40 minutes at 38°C/80% relative humidity.
Remove from prover and let skin up for 10 minutes before frying.
Fry for 90 seconds each side.
Once cool, decorate with Macphie 5th Avenue® Icings as desired (heated to 40-45°C before using).
