Recipe Halloween pumpkin cakes
Ingredients
- 1kg Mississippi Muffin & Cake Mix
- 425g cold water
- 235g vegetable oil
- Orange food colouring
- 100g Macphie 5th Avenue® Dark Chocolate Icing
- Macphie Mactop® Extra
- White chocolate chips
- Small chocolate flakes
Method
Place the Macphie Mississippi Muffin & Cake Mix into a mixing bowl fitted with a paddle and beat on slow speed whilst gradually adding the liquids for 1 minute then scrape down.
Mix on middle speed for 6 minutes and blend in the orange food colouring until you have your desired colour.
Spoon the mix into domed moulds and bake for 25 mins at 180°C. Once cooked, remove from the moulds and place on a wire rack to cool.
Whip the Macphie Mactop® Extra with the orange food colouring until 3 times its volume and fill a piping bag.
Trim your orange domes so you have half rounds then pipe with the whipped Mactop® Extra and sandwich two rounds together.
Place the white chocolate chips as eyes, pipe dots for pupils with the Macphie 5th Avenue® Dark Chocolate Icing, followed by lines to emphasise the pumpkin shape. Finish with chocolate flakes for stems.
