- 1 litre Macphie Sicilian Lemon Dessert
- Crushed shortbread
- Lemon curd
- Meringue (crushed)
- Press crushed shortbread firmly into bottom of small pots.
- Pipe in lemon curd.
- Pour Macphie Sicilian Lemon Dessert into saucepan bring to boil and boil vigorously for 2 minutes, stirring regularly.
- Allow to cool slightly then pour on top of lemon curd and place in fridge to set for 1–2 hours.
- Top with crushed meringue and sprig of mint to serve.
