Recipe Lemon meringue muffins
Ingredients
- 1000g Macphie Lemon Crème Cake Mix
- 350g whole egg
- 300g vegetable oil or 240g cake margarine
- 200g water
- Macphie o.t.t® Sicilian Lemon dessert topping
- Meringue
- Macphie Mactop® Extra
Method
In a machine bowl fitted with a paddle, add the egg and Macphie Lemon Crème Cake Mix and beat for 1 minute on slow speed and 3 minutes on medium speed.
1.Add the oil/margarine and water and mix for 1 minute on slow speed. Scrape down and mix for a further 3 minutes on slow speed.
Pipe into muffin cases and bake for approx. 30 mins at 180⁰C.
Once cooled, inject the centre with Macphie o.t.t® Sicilian Lemon dessert topping.
Pipe a bulb of whipped Macphie Mactop® Extra on top of the muffin and drizzle with Macphie o.t.t® Sicilian Lemon dessert topping.
Pipe a bulb of meringue on top and toast using a blow torch.
