Recipe Mango, coconut & toffee muffins
Ingredients
- 1kg Macphie Mississippi Toffee Muffin & Cake Mix
- Macphie Buttercream Frosting
- Macphie ku-li® Mango fruit coulis
- 425g water
- 235g vegetable oil
- Desiccated coconut
Method
Place the Macphie Mississippi Toffee Muffin & Cake Mix into a mixing bowl and add the water and oil.
Mix on a slow speed for 1 minute and scrape down.
Mix on a medium speed for 6 minutes and the 1 last minute on slow speed.
Place into a piping bag and pipe into mini muffin cases.
Bake at 170°C for 20-22 minutes until fully baked.
Once chilled, remove from the cases.
Decorate with Macphie Buttercream Frosting, Macphie ku-li® Mango fruit coulis and desiccated coconut.
