Method

  1. Place the Macphie Mississippi Toffee Muffin & Cake Mix into a mixing bowl and add the water and oil.

  2. Mix on a slow speed for 1 minute and scrape down.

  3. Mix on a medium speed for 6 minutes and the 1 last minute on slow speed.

  4. Place into a piping bag and pipe into mini muffin cases.

  5. Bake at 170°C for 20-22 minutes until fully baked.

  6. Once chilled, remove from the cases.

  7. Decorate with Macphie Buttercream Frosting, Macphie ku-li® Mango fruit coulis and desiccated coconut.
