Recipe Mango & passionfruit dipped Madeline
Ingredients
- 1kg Macphie Madeira Cake Mix
- Macphie 5th Avenue® White Icing
- 400g Water
- 145g Cake Margarine
- Yellow food colouring
- Mango & Passionfruit flavouring
Method
Place the Macphie Madeira Cake Mix & Margarine into a machine bowl fitted with a paddle, mix for 1 minute on slow speed.
Add water and mix for 1 minute on slow speed, scrape down.
Mix for a further 4 minutes on middle speed.
Mix for a final minute on slow speed.
Pipe into madeleine mould and bake 160 °C fan assisted for 25-30 minutes.
Warm Macphie 5th Avenue® Icing (add your desired amount of colour and flavouring) until pipeable but not hot, pipe into a silicone madeleine mould then place baked sponge on top.
Place in blast freezer for at least 90 minutes.
Demould, let defrost and enjoy!
