Method

  1. Place Macphie Choutex in a bowl fitted with a paddle, add all the cold water and beat on slow speed for 2 minutes, scrape down and beat for a further 6-7 minutes on middle speed until a pipeable consistency is obtained

  2. Pipe eclairs onto a lightly greased baking tray, Bake for 30-40 minutes at 220⁰c

  3. Once cooled use a choux filling nozzle to fill the éclair with semi whipped Macphie Mactop® Traditional

  4. With the Macphie 5th Avenue White Icing add your desired amount of colour and flavour and warm until pliable then dip éclair so just the top is covered (keep going back to the microwave to warm the icing as it will start to become too firm to dip)

  5. Decorate as required!
