Method

  1. In a machine bowl fitted with a paddle, add the egg and Plain Crème Cake Mix and beat for 1 minute on slow speed and 3 minutes on medium speed.  Add the oil/margarine and water and mix for 1 minute on slow speed.

  2. Scrape down and mix for a further 3 minutes on slow speed.Pipe into muffin cases and bake for approx. 30mins. Pipe into muffin cases and bake for approx. 30 mins at 180⁰C.

  3. Once cooled, core out the middle of the muffin.

  4. In a bowl finely slice the mango and de-seed the passion fruit and bind together using Macphie fru-ti o.t.t® Mango & Passionfruit dessert topping.

  5. Pipe a ring of Macphie Vanilla Frosting around the outside of the cored middle and fill with the mango & passionfruit mixture.
