Recipe Mango sundae
Ingredients
- Macphie ku-li® Mango fruit coulis
- 300ml Macphie Mactop® Traditional
- 1kg Macphie Celebration Cake Mix
- 475g water
- 100g oil
- Mango sorbet
- White chocolate ice cream
- 100g diced mango
- 50g desiccated coconut
- Yellow food colouring
Method
Place Macphie Celebration Cake Mix, 300g of the water & all the oil into a machine bowl and mix for 1 min on slow speed then mix for 4 min on 2nd speed. Place the rest of the water into the machine and mix for 2 mins on slow speed.
Deposit into foil trays and bake for around 30 – 35 mins at 180°C. Once cool, cut into cubes.
Using a stand mixer, whip up the Macphie Mactop® Traditional until soft peak, put half into a piping bag. With the remaining half add 2 drops of yellow food colouring and carefully fold through once or twice to create a ripple effect.
Take a cocktail glass and carefully drizzle some Macphie ku-li® Mango fruit coulis around the rim, then sprinkle with desiccated coconut.
To serve layer up each component into the glass. Starting with the cake and spoon over some of the diced mango. Next pipe some Macphie Mactop® Traditional, follow with a scoop of mango sorbet.
To finish pipe the rippled Macphie Mactop® Traditional on top, add a scoop of white chocolate ice cream, more diced mango and drizzle with Macphie ku-li® Mango fruit coulis.
