Method

  1. Use tempered water to give a final dough temperature of 28°C (82°F)

  2. Place the Macphie 25% Doughnut Concentrate, flour, water, dried yeast, rapeseed oil and shortening into a spiral mixer and mix on slow speed for 2 mins and fast for 6 mins.

  3. Let the dough rest for a few minutes.

  4. Pin out to a rectangle and chill slightly. Pin out the lamination fat to cover 2/3rds of the dough.

  5. Place fat onto dough and do a half turn. Repeat this process a total of 3 times.

  6. Roll out to desired thickness and cut into strips, make 2 twists .

  7. Prove for around 40mins at 35°C / 85%  and let skin over for a few mins.

  8. Fry at 375°C for approx. 90 secs each side depending on size.

  9. Once cooled thin down Macphie 5th Avenue® Maple Flavour Icing slightly if required using simple syrup and enrobe.
