1. To make the Maritozzi dough place Macphie Softie®, bread flour, sugar, yeast, water, egg and milk into the spiral mixer and mix for 2 mins on slow speed, then 6 mins approx. on 2nd speed.

  2. Add softened butter and continue mixing until you get a smooth dough, and all the butter is mixed through.

  3. Scale and mould as desired.

  4. Prove for approx. 1hr at 38⁰C, 85% relative humidity.

  5. Glaze as desired using Macphie GlenGlaze®.

  6. Bake for approx. 12mins at 400⁰C.

  7. Cut open and pipe with some whipped Macphie Mactop Extra®.

  8. Dust with Macphie Sweet Snow®.

  9. You can infuse the bun or Macphie Mactop® Extra with flavours such as lemon, orange or Amaretti to provide a burst of authentic Italian flavour
