Method

  1. Place the Macphie Madeira Cake Mix & Margarine into a machine bowl fitted with a paddle, mix for 1 minute on slow speed.

  2. Add water and mix for 1 minute on slow speed, scrape down.

  3. Mix for a further 4 minutes on middle speed

  4. Mix for a final minute on slow speed.

  5. Pipe into madeleine mould and bake 160 °C fan assisted for 25-30 minutes.

  6. Warm Macphie 5th Avenue® White Icing, colour as accordingly using Matcha tea powder until pipeable but not hot, pipe into a silicone madeleine mould then place baked sponge on top.

  7. Place in blast freezer for at least 90 minutes.

  8. Demould, let defrost and enjoy!
