Recipe Mini Victoria sponges

Ingredients
- 2kg Macphie Macfil
- 720g water
- 1kg Macphie Sponge Mix
- 150g cake margarine
- Macphie Sweet Snow®
- o.t.t® Strawberry dessert topping or jam

Method Makes 36 mini cakes
Place Macphie Sponge Mix, 500g water & cake margarine into a machine bowl fitted with a whisk. Mix for 1 minute on slow speed.
Mix for a further 8 minutes on medium speed.
Mix for a final minute on slow speed.
Deposit 40g into a mini Victoria sponge tin.
Bake for 20-25 mins at 180⁰C.
Place Macphie Macfil into a bowl fitted with a beater, add in 220g of water and beat for approx. 8 minutes.
Once sponges are cooled, slice in 2.
Spread a helping of jam on to sponge and then pipe on the Macphie Macfil.
Place the other half of the cake on top & dust with Macphie Sweet Snow®.
