Method Makes 36 mini cakes

  1. Place Macphie Sponge Mix, 500g water & cake margarine into a machine bowl fitted with a whisk. Mix for 1 minute on slow speed.

  2. Mix for a further 8 minutes on medium speed.

  3. Mix for a final minute on slow speed.

  4. Deposit 40g into a mini Victoria sponge tin. 

  5. Bake for 20-25 mins at 180⁰C.

  6. Place Macphie Macfil into a bowl fitted with a beater, add in 220g of water and beat for approx. 8 minutes.

  7. Once sponges are cooled, slice in 2.

  8. Spread a helping of jam on to sponge and then pipe on the Macphie Macfil.

  9. Place the other half of the cake on top & dust with Macphie Sweet Snow®.
