Method

  1. Make up the Macphie Madeira Cake Mix by adding the margarine, olive oil and polenta into a bowl

  2. Mix on slow speed for 1 minute, add the water and mix for a further 4 minutes on a medium speed

  3. Scrape down the bowl and mix on a slow speed for 1 minute

  4. Deposit into an 8″ cake tin and bake on 160°C for 40-50 minutes

  5. Make up a soak by combining the caster sugar and orange juice together, bring to the boil and allow to reduce by 1/3

  6. Whilst the sponge is still warm, apply the soak generously.

  7. Decorate as required
