Recipe Orange Polenta cake
Ingredients
- 1kg Macphie Maderia Cake Mix
- 450g Water
- 100g Margarine
- 45g Olive Oil
- 100g Polenta
- 100g Caster Sugar
- 125ml Fresh Orange Juice
Method
Make up the Macphie Madeira Cake Mix by adding the margarine, olive oil and polenta into a bowl
Mix on slow speed for 1 minute, add the water and mix for a further 4 minutes on a medium speed
Scrape down the bowl and mix on a slow speed for 1 minute
Deposit into an 8″ cake tin and bake on 160°C for 40-50 minutes
Make up a soak by combining the caster sugar and orange juice together, bring to the boil and allow to reduce by 1/3
Whilst the sponge is still warm, apply the soak generously.
Decorate as required
