Recipe Orange Polenta cake
Ingredients
- 1kg Macphie Celebration Cake Mix
- 475g water
- 100g margarine
- 45g olive oil
- 100g polenta
- 100g caster sugar
- 125ml fresh orange juice
Method
Make up the Macphie Celebration Cake Mix by adding the margarine, olive oil and polenta into a bowl, beat together till combined.
Add 300g of the water and mix on slow speed for 1 minute, Mix for 4 minutes on medium speed then add the remaining 175g of water.
Scrape down the bowl and mix on a slow speed for 2 minutes.
Deposit into an 8″ cake tin and bake on 180°C for 40-50 minutes
Make up a soak by combining the caster sugar and orange juice together, bring to the boil and allow to reduce by 1/3
Whilst the sponge is still warm, apply the soak generously.
Decorate as required
