Method

  1. Make up the Macphie Celebration Cake Mix by adding the margarine, olive oil and polenta into a bowl, beat together till combined.

  2. Add 300g of the water and mix on slow speed for 1 minute, Mix for 4 minutes on medium speed then add the remaining 175g of water.

  3. Scrape down the bowl and mix on a slow speed for 2 minutes.

  4. Deposit into an 8″ cake tin and bake on 180°C for 40-50 minutes

  5. Make up a soak by combining the caster sugar and orange juice together, bring to the boil and allow to reduce by 1/3

  6. Whilst the sponge is still warm, apply the soak generously.

  7. Decorate as required
