Method

  1. Place Macphie Superdough Concentrate, flour, yeast and water into Spiral Mixer and mix for 3 minutes on slow speed and 6 minutes on fast speed, add the butter and clear.

  2. Allow dough to rest for approx. 1 hour. Knock back and add the fruit and peel.

  3. Weigh off at 1kg for large panettone.

  4. Place into round baking tins or panettone cases and prove for 45-50 minutes 38°C/90% RH and bake for 25-30 minutes at 425°F (218°C).
