Ingredients

  • 1kg Macphie Madeira Cake Mix
  • 145g cake margarine
  • 400g water 
  • Macphie Vanilla Frosting
  • Red colour
  • Peach colour
  • Black pin ice

Method

  1. Place the Madeira Cake Mix & margarine into a machine bowl fitted with a paddle, mix for 1 minute on slow speed,

  2. Add water and mix for 1 minute on slow speed, scrape down. Mix for a further 4 minutes on middle speed. Mix for a final minute on slow speed.

  3. Deposit 35g into lined paper cases and bake at 180°C for 25-30 mins.

  4. Once cupcakes are cool, pipe large swirls on top of 12 cupcakes with Macphie Rainbow Frosting Vanilla.

  5. Blend Macphie Vanilla Frosting with colours to make up (pipe red frosting onto 6 cupcakes to make the hat and peach onto 5 for the face).

  6. Arrange into Santa formation and cut out circles from black pin ice for eyes and pipe on a small white bulb for pupils.
