Recipe Pumpkin tiramisu

Ingredients
- 1kg Macphie American Carrot Cake Mix
- 1 litre Macphie Mactop® Traditional
- 200g water
- 300g grated pumpkin
- 100ml Strong black coffee
- 20ml Tia maria
- 750g Mascarpone
- Cocoa powder

Method
In a machine bowl fitted with a paddle add the Macphie American Carrot Cake Mix, water and grated pumpkin together and mix for 1 minute on slow speed then 3 minutes on middle speed.
Deposit the mix into a cake tray and bake on 160⁰c for 40 – 50 minutes.
When your cakes are cool, cut and arrange into the bottom of your serving dish.
Steep with black coffee and Tia Maria (to taste).
Whip together the mascarpone and Macphie Mactop® Traditional until fully combined, smooth and a little aerated, and stream in the Tia maria to taste.
Spoon the cream mixture on top of your soaked sponge. Level out and dust with a generous amount of cocoa powder.
Leave to set in the fridge for at least 2hrs before serving.
