Red berry semi-freddo


Method Makes 20 portions

  1. Whip the Macphie Mactop® Traditional until firm.

  2. Fold in the berries to the Macphie Mactop® Traditional, then gently ripple the Macphie Raspberry ku-li ®.

  3. Put mixture into a 2kg tray and freeze to make the parfait.

  4. Once the parfait has frozen cut into bars and serve with the compote.

  5. To make the compote mix 200g strawberries, 200g raspberries, 200g pomegranate and 200g Macphie Raspberry ku-li ® together.
