Recipe Red berry semi-freddo

Ingredients
- 1000g Macphie Mactop® Traditional
- 200g Macphie ku-li® Raspberry fruit coulis
- 200g pomegranate
- 200g halved raspberries
- 200g diced strawberries
- For the Compote:
- 200g strawberries
- 200g raspberries
- 200g pomegranate
- 200g Macphie ku-li® Raspberry fruit coulis

Method Makes 20 portions
- Whip the Macphie Mactop® Traditional until firm.
- Fold in the berries to the Macphie Mactop® Traditional, then gently ripple the Macphie Raspberry ku-li ®.
- Put mixture into a 2kg tray and freeze to make the parfait.
- Once the parfait has frozen cut into bars and serve with the compote.
- To make the compote mix 200g strawberries, 200g raspberries, 200g pomegranate and 200g Macphie Raspberry ku-li ® together.
