Recipe Red berry semi-freddo
Ingredients
- 500g Macphie Mactop® Traditional whipped
- 100g Macphie Raspberry Ku-li®
- 100g pomegranate
- 100g halved raspberries
- 100g diced strawberries
- For the Compote:
- 100g strawberries
- 100g raspberries
- 100g pomegranate
- 100g Macphie Raspberry Ku-Li ®

Method
Makes 10 portions
- Whip the Macphie Mactop® Traditional until firm.
- Fold in the berries to the Macphie Mactop® Traditional, then gently ripple the Macphie Raspberry ku-Li ®.
- Put mixture into a 1kg tray and freeze to make the parfait.
- Once the parfait has frozen cut into bars and serve with the compote.
- To make the compote mix 100g strawberries, 100g raspberries, 100g pomegranate and 100g Macphie Raspberry ku-Li ® together.
