Method

  1. Place the Macphie Madeira Cake Mix & Margarine into a machine bowl fitted with a paddle, mix for 1 minute on slow speed.

  2. Add water and mix for 1 minute on slow speed, scrape down then mix for a further 4 minutes on middle speed.

  3. Mix for a final minute on slow speed.

  4. Deposit into a tray and level out.

  5. Bake at 180⁰c for 40-50 minutes.

  6. Once baked, cut the sponge using a cake band to 2cm in thickness.

  7. Whip Macphie Mactop® Extra to 3 times its volume.

  8. In a frame, spread out the Macphie Mactop®  Extra evenly and place in the pre prepared fruit, cover with Macphie Mactop® Extra so it’s completely enrobed, level off the top and freeze.

  9. Once frozen place the cut sponges on top and bottom, allow to freeze and cut to size.

  10. Serve frozen
